Simply, a class is a collection of related functions and variables. And, honestly, that's about the extent of my knowledge on it!
@bko's library uses UDP to implement the NTP (network time protocol) protocol, but the inclusion of UDP carries significant RAM overhead.
To monitor serial output, PuTTY is likely your best bet in Windows. @BDub has written up an excellent guide that can help you get that set up.
